Beef Mince & Vegetables

One evening, my wife took the notion to have jacket potatoes for dinner, so we threw this together for a protein packed filler.
I hadn't had one in so long, I'd forgotten how good something as simple as a baked potato can be, especially with such a tasty filling.

Beef Stew

I was meant to be making a beef pie one evening, but I got called into work a bit last minute, so I threw a couple of little extra bits in the pie filling I'd prepared and this was the result.

Cajun Chicken Pasta

Took a couple of different recipes and put them together to make this delicious pasta dish.

Chicken Caesar Salad

We decided to have a Caesar salad for a change from our usual tuna salad. We'd never made one at home before because it just seemed a bit boring. However, it proved to be anything but. So refreshing and full of flavour, perfect after a hot summers day.
This is about as simple as it gets too, with store bought dressing and croutons.

Chicken Noodle Soup

Trialled this week and passed with flying colours.
Make sure your spice cupboard is stacked for this one.

Chicken Satay Flatbreads

Inspired by the satay we indulged on our honeymoon in Thailand and our habit of throwing anything tasty into a flatbread.
These can be enjoyed according to the recipe as flatbreads or simply satay skewers and dip.

Chinese Chicken Curry

After a bit of trial and error and I finally made a Chinese takeaway style chicken curry I'm happy with.
So good in fact, it will give a lot of local takeaways a run for their money.

Greek Chicken Gyros

Super tasty and a regular Friday night fakeaway in our home.
Marinade the meat before work, throw it on some skewers and straight in the grill when you get home and dinner can be ready in 25 minutes. So easy.

Pork Loin Chops in Creamy Mushroom & Mustard Sauce

The best thing about this dish is the sauce can be made to go with anything, especially steaks.
The pork chop is a nice change though and very cost effective.

Roast Chicken

We love a roast dinner on a Sunday and this roast chicken is so quick, cheap and easy, it's a no brainer.

Sausages & Onion Gravy

Another favourite in our home. So cheap and so tasty.
You can't go wrong with this classic.

Scouse

One of my favourite childhood meals was my Grandma's scouse.
She always kept her recipes a secret but here's my version which is as close as I've come to date.
It's a work in progress but still delicious.

Slow Cooker Roast Beef

Simple, practical and melt in the mouth delicious. This slow cooker roast beef can be prepared in less than 15 minutes and left to cook slowly, freeing up the rest of the day to do the things you love the most.

Tuna Salad

Simple delicious tuna salad.
