Chinese Chicken Curry

Serves: 2

Total Time: 50 minutes

Ingredients

  • 400ml Chicken Stock

  • 3 Tablespoons Plain Flour

  • 1 Tablespoon Medium Curry Powder

  • 1 Teaspoon Ground Turmeric

  • 1/2 Teaspoon Chinese 5 Spice

  • 2 Tablespoons Groundnut Oil

  • 2 Chicken Breasts Diced (1 inch)

  • 1 Tablespoon Fresh Ginger Finely Grated

  • 2 Cloves Garlic Minced

  • 2 Onions Roughly Chopped

  • 1/2 Cup Frozen Peas

  • 1 Teaspoon Sugar

Directions

  1. Prepare stock and add to a blender with plain flour, medium curry powder, turmeric and Chinese 5 spice. Blend until smooth and leave aside.

  2. Heat groundnut oil in a large frying pan or wok on a medium high heat. Stir fry chicken until golden brown and cooked through, 8-10 minutes.

  3. Add the ginger and garlic, reduce heat to medium and stir fry until fragrant, approximately 1 minute.

  4. Turn heat back up to medium high and add onions. Stir fry until onions start to soften and brown, 3-5 minutes.

  5. Add the sauce you set aside earlier. Once simmering reduce heat to low.

  6. Add frozen peas and sugar. Allow to simmer for 15 minutes.

  7. Serve over rice.
