Chinese Chicken Curry

Ingredients
400ml Chicken Stock
3 Tablespoons Plain Flour
1 Tablespoon Medium Curry Powder
1 Teaspoon Ground Turmeric
1/2 Teaspoon Chinese 5 Spice
2 Tablespoons Groundnut Oil
2 Chicken Breasts Diced (1 inch)
1 Tablespoon Fresh Ginger Finely Grated
2 Cloves Garlic Minced
2 Onions Roughly Chopped
1/2 Cup Frozen Peas
1 Teaspoon Sugar
Directions
Prepare stock and add to a blender with plain flour, medium curry powder, turmeric and Chinese 5 spice. Blend until smooth and leave aside.
Heat groundnut oil in a large frying pan or wok on a medium high heat. Stir fry chicken until golden brown and cooked through, 8-10 minutes.
Add the ginger and garlic, reduce heat to medium and stir fry until fragrant, approximately 1 minute.
Turn heat back up to medium high and add onions. Stir fry until onions start to soften and brown, 3-5 minutes.
Add the sauce you set aside earlier. Once simmering reduce heat to low.
Add frozen peas and sugar. Allow to simmer for 15 minutes.
Serve over rice.
