Slow Cooker Roast Beef

Serves: 4

Cook Time: 3 hours 50 minutes

Total Time: 4 hours

Ingredients

  • 1kg Beef Joint

  • Olive Oil

  • Sea Salt

  • Cracked Black Pepper

  • 2 Carrots

  • 1 Onion

  • 2 Celery Sticks

  • 2 Medium Potatoes

  • 2 Sprigs Thyme

  • 2 Bay Leaves

  • 1.5 Cups Beef Stock

  • 1 Tablespoon Tomato Purée

  • 1 Teaspoon Worcestershire Sauce

Directions

  1. Season beef joint with sea salt and black pepper, rub in olive oil.

  2. Peel and roughly chop all vegetables and throw in the slow cooker with thyme sprigs and bay leaves, drizzle with olive oil.

  3. Pour in beef stock, tomato purée and Worcestershire sauce.

  4. Place beef on top and cook on high for about 4 hours, turning hourly if possible.

  5. Use remaining stock to make a gravy. Discard thyme sprigs and bay leaves. Serve along with slow cooked veg and your favourite roast dinner sides.
