Greek Chicken Gyros

Serves: 2

Marinating Time: 4 hours +

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes + marinating time

Ingredients

  • 1 Large Chicken Breast Diced (1 inch)

Marinade

  • 2 Cloves Garlic Minced

  • 1/2 Tablespoon White Wine Vinegar

  • 1.5 Tablespoons Lemon Juice

  • 1/2 Tablespoon Extra Virgin Olive Oil

  • 1.5 Tablespoons Greek Yoghurt Full Fat

  • 2 Teaspoons Dried Oregano

  • 1/2 Teaspoon Sea Salt

  • Pinch Ground Black Pepper

To Serve

  • 4 Pittas or Flatbreads

  • 10 Cherry Tomatoes Halved

  • 1/2 Cucumber Diced

  • 1/2 Red Onion Finely Sliced

  • 1/4 Cup Fresh Flat Leaf Parsley Minced

  • 200g Tub Tzatziki

  • 4 Tablespoons Houmous

Directions

  1. Combine all marinade ingredients in a medium bowl. Add chicken, stir to combine, cover and refrigerate for at least 4 hours.

  2. Pre heat grill to medium high and place marinated chicken on skewers.

  3. Place chicken skewers under the pre heated grill for 10 minutes, turn over and grill for a further 10 minutes.

  4. Meanwhile prepare salad ingredients.

  5. Remove chicken from grill once cooked and take out skewers.

  6. Spread 1 tablespoon of houmous on each pitta/flatbread.

  7. Serve chicken on pittas/flatbreads with salad, tzatziki and topped with fresh parsley.
