Greek Chicken Gyros

Total Time: 40 minutes + marinating time
Ingredients
1 Large Chicken Breast Diced (1 inch)
Marinade
2 Cloves Garlic Minced
1/2 Tablespoon White Wine Vinegar
1.5 Tablespoons Lemon Juice
1/2 Tablespoon Extra Virgin Olive Oil
1.5 Tablespoons Greek Yoghurt Full Fat
2 Teaspoons Dried Oregano
1/2 Teaspoon Sea Salt
Pinch Ground Black Pepper
To Serve
4 Pittas or Flatbreads
10 Cherry Tomatoes Halved
1/2 Cucumber Diced
1/2 Red Onion Finely Sliced
1/4 Cup Fresh Flat Leaf Parsley Minced
200g Tub Tzatziki
4 Tablespoons Houmous
Directions
Combine all marinade ingredients in a medium bowl. Add chicken, stir to combine, cover and refrigerate for at least 4 hours.
Pre heat grill to medium high and place marinated chicken on skewers.
Place chicken skewers under the pre heated grill for 10 minutes, turn over and grill for a further 10 minutes.
Meanwhile prepare salad ingredients.
Remove chicken from grill once cooked and take out skewers.
Spread 1 tablespoon of houmous on each pitta/flatbread.
Serve chicken on pittas/flatbreads with salad, tzatziki and topped with fresh parsley.
