Ingredients
1 Tablespoon Olive Oil
250g Diced Beef or Lamb
1/4 Teaspoon Ground Black Pepper
1/2 Teaspoon Sea Salt
1 Onion Diced
1 Beef Stock Cube
500ml Boiling Water
2 Bay Leaves
1/4 Teaspoon Dried Thyme
4 Carrots Diced
4 Medium Potatoes Chopped
1 Swede Diced
Directions
Heat olive oil over medium heat in a large pan. Add beef/lamb, sea salt and ground black pepper. Sear until browned.
Add onions and continue to cook for 10 minutes or until soft and translucent. Do not allow to brown, reduce heat if necessary.
Add boiling water, stock cube, bay leaves, dried thyme, carrots, potatoes and swede to the pan and bring to a simmer.
Once simmering, place lid on the pan, reduce heat to low and allow to simmer for 2 hours 15 minutes, stirring every 45 minutes or so.
