Beef Stew

Serves: 2

Total Time: 2 hours 20 minutes

Ingredients

  • 1 Tablespoon Olive Oil

  • 250g Diced Beef

  • 2 Carrots Diced

  • 1 Onion Diced

  • 1 Tablespoon Tomato Puree

  • 1 Cup Beef Stock

  • 1 Tablespoon Worcestershire Sauce

  • 1/2 Cup Frozen Peas

  • Salt

  • Pepper

Directions

  1. Heat olive oil in a large pan over a medium high heat. Add beef and brown.

  2. Add onions and carrots until softened. Add tomato puree and cook while stirring for about 1 minute.

  3. Add beef stock and Worcestershire sauce, stir to combine and bring to a simmer. Reduce heat to low, place lid on and simmer for about 2 hours, stirring every 30 minutes or so. If liquid reduces too much, add more water and stir.

  4. Add frozen peas for the last 5 minutes. Season to taste and serve.
