Le Roule Stuffed Chicken Wrapped in Bacon

Ingredients
2 Chicken Breasts Butterflied
4 Rashers Smoked Bacon
150g Le Roule Cheese
40g Mature Cheddar Grated
1 Cup Spinach
Olive Oil
Salt
Black Pepper
Directions
Pre heat oven to 200C.
Meanwhile, place spinach in sieve or colander and pour over boiling water until wilted. Squeeze excess liquid from spinach.
Place le roule, cheddar and spinach in a bowl and stir to combine.
Spoon half of the cheese mix into centre of each butterflied chicken breast. Fold chicken breast back over to enclose the cheese mix.
Wrap each breast in 2 rashers of bacon so they're evenly covered and place in an oven safe dish.
Drizzle with olive oil, season with salt and pepper and place in the pre heated oven for 30 minutes or until cooked through.
Serve with your choice of sides.
