Seafood Linguine

Ingredients
250g Linguine Pasta
3 Tablespoons Butter
1 Shallot Finely Diced
2 Cloves Garlic Minced
3/4 Cup Whipping Cream
1/4 Cup Parmesan Cheese Finely Grated
1 Tablespoon Flat Leaf Parsley Chopped
1 350g Bag Frozen Seafood Selection (Prawns, Squid, Mussels) Thawed Under Cold Running Water
Fine Sea Salt
Ground Black Pepper
Directions
Cook pasta according to packaging instructions, until al dente. Drain and reserve 2 tablespoons of pasta water.
Melt butter in large frying pan.
Add shallots and sauté until clear, add garlic and continue cooking for 1 minute then transfer to a bowl.
Add whipping cream and thawed seafood selection to pan.
Heat over medium/low temperature until cream comes to a low simmer.
Add Parmesan cheese, salt, pepper and parsley to seafood mixture, keep warm.
Add cooked linguine and pasta water to seafood mixture, stir and serve immediately.
