Seafood Linguine

Ingredients

  • 250g Linguine Pasta

  • 3 Tablespoons Butter

  • 1 Shallot Finely Diced

  • 2 Cloves Garlic Minced

  • 3/4 Cup Whipping Cream

  • 1/4 Cup Parmesan Cheese Finely Grated

  • 1 Tablespoon Flat Leaf Parsley Chopped

  • 1 350g Bag Frozen Seafood Selection (Prawns, Squid, Mussels) Thawed Under Cold Running Water

  • Fine Sea Salt

  • Ground Black Pepper

Directions

  1. Cook pasta according to packaging instructions, until al dente. Drain and reserve 2 tablespoons of pasta water.

  2. Melt butter in large frying pan.

  3. Add shallots and sauté until clear, add garlic and continue cooking for 1 minute then transfer to a bowl.

  4. Add whipping cream and thawed seafood selection to pan.

  5. Heat over medium/low temperature until cream comes to a low simmer.

  6. Add Parmesan cheese, salt, pepper and parsley to seafood mixture, keep warm.

  7. Add cooked linguine and pasta water to seafood mixture, stir and serve immediately.
