Grilled Lemon Chicken Flatbreads

Serves: 2

Marinating Time: 4 hours +

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes + marinating time

Ingredients

  • 1 Large Chicken Breast Diced (1 inch)

Marinade

  • 1 Tablespoon Olive Oil

  • 2 Cloves Garlic Minced

  • 1 Lemon Zested and Juiced

  • 1/2 Teaspoon Fine Sea Salt

  • Pinch Ground Black Pepper

  • 1/4 Teaspoon Dried Oregano

  • 1/4 Teaspoon Ground Cumin

  • 1/8 Teaspoon Ground Coriander

  • 1/8 Teaspoon Paprika

To Serve

  • 4 Flatbreads

  • 80g Bag Watercress, Spinach & Rocket

  • 1 Tomato Sliced

  • 1/2 Red Onion Finely Sliced

  • Sriracha Mayo

Directions

  1. Place the chicken into a medium size bowl with all the marinade ingredients. Stir until well combined. Place in refrigerator to marinade.

  2. Pre heat grill to medium high heat. Using 4 bamboo skewers (you can soak these in water first to prevent burning), skewer the chicken so that there is equal portions of meat on each skewer.

  3. Place the chicken skewers into the grill, and cook them for about 16-20 minutes, turning them half way so that they get a bit charred on all sides, or until cooked through. 

  4. Meanwhile, add a little drizzle of the sriracha mayo onto the flatbreads, followed by the greens, a couple of slices of tomato, a scattering of red onion and a skewer of the lemon chicken, followed by a second drizzle of sriracha mayo. Serve.
