Creamy Tuscan Chicken Pasta

Ingredients

  • 150g Dried Spaghetti / Linguine / Fettuccine / Tagliatelle / Pappardelle

  • 1 Large Chicken Breast Sliced Thinly

  • 1 Tablespoon Olive Oil

  • 1/2 Cup Double Cream

  • 1/4 Cup Chicken Broth

  • 1/2 Teaspoon Garlic Powder

  • 1/2 Teaspoon Italian Seasoning

  • 1/4 Cup Parmesan Cheese

  • 1 Cup Spinach Chopped

  • 1/3 Cup Sun Dried Tomatoes Chopped

Directions

  1. Cook pasta according to package instructions.

  2. Meanwhile, heat olive oil in a large skillet over a medium high heat, add chicken and cook for 3-5 minutes on each side or until golden brown and cooked through. Remove chicken and set aside.

  3. Reduce heat to medium low and add the double cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Stir over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan followed by the cooked pasta, stir to combine and serve immediately.
