Creamy Salmon Pasta

Serves: 2

Ingredients

  • 150g Dried Spaghetti / Linguine / Fettuccine / Tagliatelle / Pappardelle

  • 200g Salmon Fillet Skin Removed

  • 1 Shallot Diced

  • 1 Clove Garlic Minced

  • 1 Tablespoon Butter

  • 1 Tablespoon Olive Oil

  • 1/4 Cup Dry White Wine

  • 1/2 Cup Double Cream

  • 2 Cups Mixed Greens (Spinach, Arugula, Watercress)

  • 1/2 Lemon Zest

  • 1 Tablespoon Lemon Juice

  • Sea Salt

  • Black Pepper

  • 1 Tablespoon Flat Leaf Parsley Minced

Directions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions.

  2. While the pasta is cooking cut salmon into bite-sized pieces. Season with salt and pepper and sear on all sides in 1 tbsp of butter in a large pan until cooked all the way through, 2-3 minutes. Remove to a separate plate.

  3. To the same pan add olive oil, shallots and garlic and sauté over low heat for 1-2 minutes, turn the heat to medium and add white wine and let it reduce for 5-7 minutes, then add the cream and mixed greens, lemon zest and lemon juice. Mix to combine, season to taste, then add the drained pasta to the sauce and toss to combine. Top with seared salmon, chopped parsley and serve.
