Bibimbap

Ingredients

  • 1/2 Cup White Rice

  • 1 Small Carrot Matchsticked

  • 1/2 Courgette Matchsticked

  • 60g Shiitake Mushrooms Sliced

  • 1/2 Cup Bean Sprouts

  • 1 Cup Fresh Baby Spinach

  • 1/2 Cup Kimchi

  • 250g Minced Beef

  • 1 Teaspoon Baking Soda

  • 1 Clove Garlic Minced

  • 2 Tablespoons Soy Sauce Divided

  • 1/2 Tablespoon Gochujang or Sriracha

  • 1 Tablespoon Sesame Oil Divided

  • 2 Eggs

  • Sesame Seeds

Directions

  1. Cook rice according to package instructions.

  2. Sauté mushrooms in pan with 1 tsp sesame oil and 1 tsp soy sauce for 1-2 minutes on high heat. Continue cooking all veggies this way individually in the same pan, setting aside in a large bowl each time.

  3. Meanwhile, toss minced beef with baking soda, garlic, gochujang/sriracha and 1 tablespoon soy sauce.

  4. Heat 1/2 tablespoon sesame oil over medium high heat, then cook minced beef for 5-6 minutes. Remove from pan.

  5. Using another tiny bit of sesame oil, heat the same pan on high and add egg. Fry until egg is how you like.

  6. Split the rice between two bowls. Plate up the vegetables and meat how you like. Top with fried egg. Garnish with sesame seeds and serve.
